Zucchini and Lemon Pasta

  1. First, cook 1/2lb of pasta in salted water until al dente. Reserve 1 cup of pasta water.

  2. Then, add 2 tbsp of butter and 2 tbsp of olive oil to a pan on medium heat. Add 1 onion cut into slices to the pan and season with salt and pepper.

  3. Cook until caramelized then add 1 zucchini thinly sliced. Cook these on both sides until tender then add your cooked pasta, a dash of pasta water, zest/ juice of one lemon.

  4. Mix well with another tbsp of butter & 1/2 cup of Parmesan. Add more pasta water as needed
