Pumpkin Vodka Sauce

1. Cook 1/2 lb pasta until al dente. Save some salty pasta water.

2. Add 2 tbsp of butter and a dash of olive to a pan with 3 cloves of minced garlic.

3. Add 3 tbsp of tomato paste & 1/2 a cup of pumpkin purée.

4. Mix and let cook until the mixture darkens slightly.

5. Add 1 shot of vodka and mix. Add 1 cup of heavy cream and mix to combine.

6. Cook for 5-7 minutes to let the vodka cook off. Add 1/2 cup more heavy cream.

7. Season with salt, pepper, garlic & onion powder.

8. Add your cooked pasta, 1/2 a cup of Parmesan & a dash of pasta water.

9. Mix together and top with more parm! Enjoy :)
