One Pot Chicken Broccoli Alfredo

Ingredients:

  • 3 tbsp butter

  • Olive oil

  • 1 large chicken breast (or two smaller ones)

  • 3 cloves of minced garlic

  • 1/2lb pasta

  • 32oz chicken broth

  • 5oz chopped broccoli florets

  • 1/2 cup heavy cream

  • 1 cup parmesan

  • 1/2 cup mozzarella

  • Parsley

  • Salt, pepper, garlic powder, onion powder, paprika

Recipe:

  1. Start by adding 3 tbsp of butter and a dash of olive oil to a pan on medium heat.

  2. Cut up one large chicken breast (or two small ones) into bite sized pieces. Season with salt, pepper, garlic/ onion powder, paprika and parsley. Mix together with a little olive oil

  3. Add your chicken to the hot pan and cook on all sides until cooked through. Remove your chicken from the pan and add minced garlic.

  4. Cook this until fragrant and then add your dry pasta. Mix that around to cover in garlic/ oil

  5. Cover your pasta with chicken broth and cover. Simmer for 8-10 minutes until the pasta is al dente and the broth is mostly absorbed.

  6. Toss in your broccoli and cook for an additional minute or two. Season with the same seasonings used on the chicken and add your cheeses.

  7. Mix well and add your cooked chicken back with some parsley.

  8. Top with more cheese and enjoy!!
