Pesto Pastina
Ingredients:
• 3 tbsp of butter
• olive oil
• 3 cloves minced garlic
• 1 cup pastina
• 3 cups chicken broth
• 1/2 pesto
• 3/4 cup parmesan
• salt / pepper
Recipe:
1. First, add 3 tbsp of butter and a dash of olive oil to a large pan on medium heat. Then add 3 cloves of minced garlic and cook until fragrant.
2. Toss in 1 cup pastina and mix it with the oil and garlic. Then, pour in 3 cups of chicken broth. Bring it to a simmer and stir.
3. When most of the liquid is absorbed turn off the heat. Add 1/2 cup of pesto and 3/4 cup of Parmesan. Season with salt/ pepper.
4. Mix quickly to combine and top with more parm, olive oil and pepper. Enjoy!!
