Pesto Mac & Cheese
Ingredients:
1/2lb pasta
4 tbsp of butter
4 tbsp of flour
2 cups of milk
1/2 cup of pesto (homemade or store bought)
1 cup cheddar
1/2 cup mozz
1/2 cup parmesan
Salt, pepper, paprika, garlic/ onion powder
Recipe:
Start by cooking your pasta in salted water until it’s al dente. Reserve 1 cup of pasta water.
Add 4 tbsp of butter to a pan on medium heat. Once it’s melted, add 2 cloves of minced garlic. Cook that until fragrant.
Mix in 4 tbsp of flour. Slowly add 2 cups of milk. Whisk together to ensure you don’t get any lumps.
Mix your sauce until smooth then season it. Add 1/2 cup of pesto and whisk it together well.
Add in your cheeses and mix until a creamy sauce forms. Mix in your cooked pasta and some reserved pasta water. Add more mozz if you want it extra cheesy! Enjoy :)
