Broccoli Cheddar Pasta Bake

Ingredients:

  • 1/2lb pasta

  • 4oz broccoli florets

  • 3 tbsp of butter

  • 1 tbsp of olive oil

  • 1/2 large diced onion

  • 3 cloves garlic

  • 1 1/2cups heavy cream

  • 1/2 cup broth

  • 1 tsp dijon mustard

  • 1/2 cup cheddar

  • 1/2 mozzarella

  • + more cheese for topping

  • 1/2 cup American cheese

  • Salt, pepper, garlic/ onion powder, paprika

Recipe:

  1. Cook 1/2lb of pasta in salted water until al dente. When there is 2 minutes left, toss in your broccoli florets and cook them with the pasta for the remaining time. Reserve 1 cup of pasta water.

  2. Then, add 3 tbsp of butter and a dash of olive oil to a pan on medium heat. Once the butter has melted, add 1/2 a large diced onion and season with salt/ pepper.

  3. Cook the onions until translucent then add 3 cloves of minced garlic. Let that become fragrant then add in 1.5 cups of heavy cream and 1/2 a cup of broth.

  4. Mix it all together then season with salt, pepper, garlic powder, onion powder and a touch of paprika. Add your mustard in here.Bring the sauce to a simmer then add your cheeses.

  5. Let those melt down then add in your cooked pasta & broccoli with some reserved pasta water.

  6. Mix that together until a creamy sauce forms. Top with more cheese and then broil for a few minutes until the top is bubbly and browned. Enjoy :)
