Eggplant Parmesan

Ingredients :

  • 1 large eggplant

  • 3/4 cup of flour

  • 2 eggs

  • 1 1/2 cups of breadcrumbs

  • 3 cups of veggie oil (or enough to cover 2 inches of your pan)

  • 2 cups of tomato sauce

  • 8oz fresh mozzarella

  • Fresh basil

  • Salt, pepper and garlic powder to taste

Recipe:

  1. Cut 1 large eggplant into slices. Season each slice with salt and let sit for 30 minutes.

  2. After 30 minutes, dry your eggplant with a paper towel and begin breading them.

  3. In three separate bowls, add flour, 2 eggs whisked and breadcrumbs. Season all with salt, pepper and garlic powder.

  4. Dunk your eggplant in flour, egg and then breadcrumbs.

  5. Heat up a pan with veggie oil to 350F and add your eggplant in batches so they don’t get too crowded.

  6. Cook them on both sides until golden brown, then, remove them from the pan and put them on a wire rack/ paper towel. Season with a sprinkle of salt. Repeat this process.

  7. Add a spoonful of tomato sauce to each piece with a slice of fresh mozzarella.

  8. Put them on to a baking dish and broil for a few minutes until the cheese melts.

  9. Remove them from the oven and top with basil and fresh parmesan.

  10. Serve with cooked pasta, more tomato sauce and parmesan cheese. Enjoy :)
