Creamy Mac & Cheese (no roux)

Ingredients:

  • 1/2 lb of pasta

  • 4 tbsp of butter

  • 2 cloves of minced garlic

  • 1.5 cups of heavy cream

  • 1 cup of shredded cheddar cheese

  • 1 cup mozzarella

  • 1/2 cup of parm

  • Salt, pepper, garlic/ onion powder, paprika

  • Pasta water as needed

Recipe:

1. First, cook 1/2 lb of pasta in salted water until al dente. Reserve 1 cup of pasta water

2. Next, add 4 tbsp of butter to a pan on medium heat. Once it’s melted, add 2 cloves of minced garlic. Cook until fragrant then add 1.5 cups of heavy cream. Mix well then season with salt, pepper, paprika and garlic/ onion powder.

3. Bring to a simmer then add 1 cup of shredded cheddar cheese, 1 cup mozzarella and 1/2 cup of parm. Whisk together until a creamy sauce forms.

4. Then, add your cooked pasta and a dash of pasta water. Mix it together then top with more parm enjoy!
