Mac & Cheese (roux)

  1. First, cook 1/2lb of pasta until al dente in salted water. Save some pasta water

  2. Then, add 4 tbsp of butter to a pan on medium heat. Once that is melted, add in 2 cloves of minced garlic.

  3. Cook that until fragrant then add in 4 tbsp of flour. Mix that well and let it cook for a few minutes.

  4. Pour in 3 cups of milk, slowly. Whisking to make sure there are no lumps.

  5. Let your sauce thicken, then season with salt, pepper, garlic/ onion powder and a little paprika.

  6. Then add your cheeses. I did 2 cups cheddar, 1 cup mozzarella, 1 cup Asiago, 1 cup Colby Jack and 1/2 a cup of Parmesan. Make sure they are freshly grated cheeses so they melt well.

  7. Stir together until your cheese is melted then add in your cooked pasta and a little pasta water. * optional * Add more mozzarella to give it more of a cheese pull.

  8. Top your Mac with some extra of all the cheeses and bake at 350 for 20 minutes. Then broil (if needed) to give it a crunchy, browned crust.

  9. Let it cook for a few minutes and then you’re ready to enjoy!
