Brown Butter Pumpkin Alfredo

Ingredients :

  • 1/2lb pasta

  • 4 tbsp butter

  • 7-9 sage leaves

  • Salt, pepper, paprika, onion/ garlic powder

  • 1 1/4 cup heavy cream

  • 1/4 broth

  • 10oz pumpkin puree

  • 1 cup parm

  • 1/2 cup mozz

Recipe:

  1. Cook 1/2lb of pasta in salted water until al dente. Reserve 1 cup of pasta water

  2. Add 4 tbsp of butter to a pan on medium heat and cook until browned. Make sure you don’t burn your butter!

  3. Then, mince 3 cloves of garlic and add that to your pan with some salt, pepper, garlic/ onion powder, paprika and fresh chopped sage.

  4. Mix together for a few seconds until fragrant then add in 1 1/4 cup of heavy cream and 1/2 cup of broth.

  5. Season again and whisk together. When simmering, add pumpkin puree.

  6. Stir until well combined then add in your cheeses. Once those are melted add in your cooked pasta and pasta water until creamy.

  7. Ps. If you want it extra cheesy add more mozz! Top with more parm and sage and enjoy :)
