Baked Gnocchi with Mini Meatballs
Ingredients:
1lb gnocchi
1/2lb beef
1/2lb pork
1/2 cup breadcrumbs
1 egg
Salt/ pepper
1 onion diced
3 cloves minced garlic
Olive oil
3 tbsp tomato paste
20oz tomato sauce
1 cup ricotta
1 cup mozz
1/2 cup Parmesan
Recipe:
Cook your gnocchi according to box instructions. Reserve some pasta water.
Add your beef, pork, breadcrumbs, egg and salt/ pepper to a bowl. Mix well and form small balls.
Cook your meatballs in olive oil until browned on all sides. Remove them from the pan.
Dice your onion and season with salt and pepper. Cook until translucent then add in minced garlic.
Cook that until fragrant then mix in tomato paste. Let that darken then add in your tomato sauce. Stir it all together.
Add in ricotta, mozzarella and parm. Mix it well then add in your mini meatballs and gnocchi.
Tossing more cheese/ pasta water if needed. Top with more mozzarella and broil for a few minutes until the top is slightly browned and bubbly.
Top with more ricotta and enjoy!
