Broccoli Cheddar Chicken Parmesan
Ingredients:
•1/2lb of pasta
•5oz broccoli florets
Chicken Cutlet:
•2 thin chicken breasts
•2 eggs
•1 cup breadcrumbs
•salt and pepper
•16oz veggie oil
Broccoli Cheddar Sauce:
•3 tbsp of butter
•Olive oil
•4 cloves of minced garlic
•2 cups of heavy cream
•salt, pepper, garlic/ onion powder.
•1 cup of cheddar
•1/2 cup mozzarella
•1/4 cup American cheese
•1/4 cup parmesan
•2oz fresh mozzarella
Recipe:
Cook 1/2lb of pasta until al dente. When there is 3 minutes left in cooking, add 5oz broccoli. Reserve some pasta water
Next, bread your chicken breasts. Whisk two eggs together and add them to one bowl. then, add 1 cup of breadcrumbs to another plate. Season both with salt and pepper.
Dunk your chicken in the egg mixture and then the breadcrumbs. Make sure it is well covered.
Heat veggie oil in a pan until it is 350F then fry your chicken on both sides until golden brown.
Then, start making the sauce. Add 3 tbsp of butter and a dash of olive oil to a pan on medium heat.
Add in 4 cloves of minced garlic and cook them until they’re fragrant. Pour in 2 cups of heavy cream and mix well.
Bring this to a simmer and season with salt, pepper, garlic/ onion powder.
Toss in 1 cup of cheddar, 1/2 cup mozzarella, 1/4 cup American cheese and 1/4 cup parmesan. Whisk this together until melted.
Add in your cooked broccoli and give this another mix.
Top each cutlet with the sauce and more mozzarella. Broil them until the cheese is melted.
Add the cooked pasta to the rest of the sauce with a little pasta water.
Then it’s time to serve! Add your pasta to a plate with the chicken and top with Parmesan and parsley.
