Pumpkin Mac & Cheese

Ingredients:

  • 1/2lb pasta

  • 4 tbsp butter

  • 3 cloves minced garlic

  • 1.5 cups of heavy cream

  • 1 cup pumpkin puree

  • 1 cup cheddar

  • 1/2 cup Gouda

  • 1/4 cup parm

  • 1/4 cup mozzarella

  • Salt, pepper, garlic/ onion powder

Recipe:

  1. Cook 1/2lb of pasta in salted water until al dente. Reserve 1 cup of pasta water

  2. Next, add the butter to a pan on medium heat. Once it’s melted, add your minced garlic.

  3. Cook that until fragrant then add in your heavy cream. Bring that to a simmer, then turn down the heat and add the pumpkin.

  4. Whisk that together until well combined and then bring that to a simmer again. Season your dish then add your cheeses.

  5. Once the cheeses are melted, add in your cooked pasta and pasta water and mix your dish until it’s creamy.

  6. Top with more Parmesan and burrata ! enjoy :)
