Shrimp Scampi

  1. Start by cooking your pasta in salted water until al dente. Reserve 1 cup of pasta water.

  2. Season 3/4lb of shrimp with salt, pepper, garlic/ onion powder, fresh parsley and a squeeze of lemon juice. Mix it all together with a little olive oil until your shrimp is well coated.

  3. Add 2 tbsp of butter and some olive oil to a pan on medium heat. Cook your shrimp on both sides then remove it from the pan

  4. Toss in 3 cloves of minced garlic and one diced shallot. Season with salt.

  5. Once the garlic is fragrant, add the juice of one lemon and a handful of fresh parsley.

  6. Mix this well then deglaze the pan with 1/4 cup of wine and 1/4 cup of chicken broth.

  7. Once the alcohol has evaporated add your cooked pasta and a dash of pasta water.

  8. Stir it together then add 1/2 cup of Parmesan, another handful of parsley and stir until a creamy sauce forms. Give your sauce another good squeeze of lemon & toss your shrimp back in.

  9. Serve with more parsley/ cheese and enjoy!!
