Marry Me Salmon Pasta
1. First, cook 1/2 lb of pasta in salted water until al dente.Reserve 1 cup of pasta water.
2. Then, season two salmon fillets on both sides. I used salt, pepper, onion/ garlic powder, paprika & dried basil. Mix until covered.
3. Add 3 tbsp butter/ olive oil to a pan on medium heat then add your seasoned salmon. Cook it for a few minutes on both sides then baste your salmon with a few extra tbsp of butter. Then, remove it from the pan.
4. After, toss in 1 small diced onion. Season with salt and pepper and cook until tender.
5. Then, add in 3 cloves minced garlic. Cook the garlic until it’s fragrant then add a handful of fresh spinach & 1/2 a cup of sundried tomatoes.
6. Cook for a few minutes until the spinach cooks down then add 1 cup of heavy cream & 1/2 cup of chicken broth. Mix well then let your sauce cook until it’s slightly simmering. Then, lower the heat & season with same seasonings used for the salmon.
7. Add in your cooked pasta, chicken& 1 cup of Parmesan cheese with some fresh basil. Add more pasta water as needed. Mix well then top with more cheese and fresh basil & enjoy!!
