Creamy Sungold Tomato Pasta

  1. Cook 1/2lb of pasta in salted water until al dente. Reserve 1 cup of pasta water.

  2. Next, add 3 tbsp of butter and a dash of olive oil to a pan on medium heat. Then add 1 pint of sungold tomatoes. Sprinkle with salt and let cook for 5-10 minutes.

  3. Once tomatoes are tender, smush them with a spoon. Leave some of them intact. Then, add 3 cloves of minced garlic and cook them until they’re fragrant.

  4. Then, add 1 cup of heavy cream. Mix well. Bring your sauce to a simmer then season with salt, pepper and garlic/ onion powder. Add your cooked pasta, a dash of pasta water, 1/2 cup of parm cheese, 1/2 cup of ricotta and a handful of fresh basil.

  5. Mix it all together and let simmer for a few minutes. Top with more parm and basil. Serve immediately and enjoy :)
