Bacon Mac & Cheese
1. First, cook 1/2 lb of pasta in salted water until al dente. Reserve 1 cup of pasta water. I used Wegman’s GF Tortellini
2. Add 6 slices of bacon to a pan on medium heat and cook on both sides until crispy. Remove from the pan and add them to a paper towel to soak up any excess grease.
3. Next, use a paper towel to get rid of some of the grease in the pan. Then, add 4 tbsp of butter to the same pan. Once it’s melted, add 3 cloves of minced garlic. Cook until fragrant then add 1 1/4 cups of heavy cream. Mix well then season with salt, pepper, paprika and garlic/ onion powder.
4. Bring to a simmer then add 1 cup of shredded cheddar cheese, 1 cup mozzarella and 1/2 cup of parm. Whisk together until a creamy sauce forms. If your sauce is too thick. don’t worry, the pasta water we are adding will thin it out.
5. Chop up your crispy bacon into small pieces and add it to your sauce. Then, add your cooked pasta and a dash of pasta water. Mix it together then top with more parm and crispy bacon. Then, it’s time to enjoy!!
