French Carbonara
First, cook 1/2lb of pasta in salted water until al dented. Reserve 1 cup of pasta water.
Cook 4oz pancetta until crispy in a pan on medium heat. Then, add 1/2 a large diced onion. Season with salt and pepper and cook until translucent.
Next, mix in 1 cup of heavy cream. Bring this to a simmer then season with salt & pepper.
Crack 2 eggs together and whisk them together.
Take your sauce off the heat and add your eggs. Mix quickly to make sure they don’t scramble.
Add in your cooked pasta with a dash of pasta water and 3/4 cup of Parmesan cheese.
Mix this all together and top with fresh chives and more cheese. Enjoy :)
