French Carbonara

First, cook 1/2lb of pasta in salted water until al dented. Reserve 1 cup of pasta water.

  1. Cook 4oz pancetta until crispy in a pan on medium heat. Then, add 1/2 a large diced onion. Season with salt and pepper and cook until translucent.

  2. Next, mix in 1 cup of heavy cream. Bring this to a simmer then season with salt & pepper.

  3. Crack 2 eggs together and whisk them together.

  4. Take your sauce off the heat and add your eggs. Mix quickly to make sure they don’t scramble.

  5. Add in your cooked pasta with a dash of pasta water and 3/4 cup of Parmesan cheese.

  6. Mix this all together and top with fresh chives and more cheese. Enjoy :)
