Truffle Cream Pasta with Roasted Garlic
Cut off the top of one head of garlic. Drizzle with olive oil and wrap in foil. Bake at 400F for 1 hour.
Cook 1/2lb of pasta in salted water until al dente. Reserve 1 cup of pasta water
Add 4 tbsp of butter and a dash of olive to a pan on medium heat. Then, add 3 cloves of minced garlic and cook until fragrant. Add in your roasted garlic. Mix to combine
After, add in 1.5 cups of heavy cream. Bring this to a simmer and season your dish with salt, pepper, garlic/ onion powder and a little paprika.
Drizzle in 1 tbsp of truffle oil and add some fresh truffles.
Toss in your cooked pasta with a little pasta water. Add in 1 cup of Parmesan cheese and mix well.
Top with more truffle and Parmesan! Enjoy :)
