Homemade Gnocchi with Pink Sauce

The Gnocchi:

  1. Clean and peel two russet potatoes. Cut them into even cubes and add them to boiling, salted water. Cook them for 12-15 minutes until the potatoes are tender (you can put a fork through them) then drain them.

  2. Mash the potatoes well, make sure there are no lumps, then season with salt.

  3. Add your mashed potatoes to a clean surface with 1 cup of flour. Make a well and add 1 room temp egg to the middle. Slowly mix the egg with the flour/ mashed potatoes to incorporate them together.

  4. Use your hands to knead the dough until smooth. Form a ball and cut it into fourths.

  5. Roll out a piece with your palm to form a long snake like shape. Cut off pieces to form your gnocchi.

Pink Sauce:

  1. Then, add 3 tbsp of butter and a dash of olive oil to a pan on medium heat. Once the butter is melted, add 3 cloves of minced garlic and mix to combine.

  2. Once the garlic is fragrant, add 3 tbsp of tomato paste. Whisk together and let it cook for a few minutes until the tomato paste darkens.

  3. Then, add 1 1/4 cups of heavy cream and mix well. Bring to a simmer then season with salt, pepper, garlic and onion powder.

  4. Next, add 1/2 cup Parm, 1/2 cup mozzarella and a handful of fresh basil. Whisk until your sauce is thick and cheesy.

  5. Cook your gnocchi in boiling, salted water for 3 minutes or until the gnocchi is fully cooked. Do not over cook!!!

  6. Save some pasta water before draining then add the gnocchi to the sauce with a little of that pasta water.

  7. Let your pasta & sauce cook together for a few minutes then top with more parm, mozzarella ( or burrata) and basil. Enjoy!!
