Fried Mac & Cheese

1. Your first step is to have leftover, cold, Mac and cheese! It can be any kind.

2. Take a handful of cold Mac and cheese and flatten it enough to put a small ball of mozzarella in the middle.

3. Roll your Mac and cheese to make a ball (make sure the mozz ball is totally covered with Mac and cheese) put in the freezer for 30 mins while you prepare the next steps.

4. Time to bread your mac! Add 1 cup flour to one plate, 4 scrambled eggs in a bowl, and 2 cups of bread crumbs in another.

5. Season each with salt and pepper. Remove your Mac balls from the freezer and cover them in the flour, then egg then breadcrumbs then back in the egg and breadcrumbs. I like doing a double coating of bread crumbs to make it extra crunchy.

6. Put your balls back in the freezer for 1 hour. Then, add your vegetable oil to a pan on medium heat. Once it is heated, add your Mac n cheese balls and fry on each side until browned.

7. Remove from the oil and put them on a paper towel to soak up any extra oil. Top with salt and let them cool for a few minutes.

8. Serve with your favorite sauce/ parm/ basil and enjoy!!
