Creamy Broccoli Pasta

  1. Start by cooking 1/2lb of pasta until al dente. Reserve 1 cup of pasta water.

  2. 3 tbsp of butter and 2 tbsp of olive oil to a pan on medium heat. Mince 4 cloves of garlic and add that to your pan.

  3. Cook for a few minutes, until fragrant, then add in 1 cup of heavy cream and 3/4 cup of broth. I used beef broth but any kind will work!

  4. Mix that together and bring the sauce to a simmer. Chop 6oz of broccoli, finely, and add that in.

  5. Season with salt, pepper, garlic/ onion powder & paprika. Stir it all together and let your broccoli cook for a few minutes.

  6. Add in your cooked pasta with a bit of pasta water. Toss in 3/4 a cup of Parmesan and 3/4 a cup of mozzarella with a big squeeze of lemon and another tbsp of butter.

  7. Mix this well, adding pasta water as needed until creamy. Top with more Parmesan and enjoy :)
