Caprese Pasta

Directions:

  1. Cook ½ lb pasta in salted water until al dente. Reserve 1 cup of pasta water.

  2. Add ¼ cup olive oil to a pan with 10oz cherry tomatoes.

  3. Cook for 5 minutes or until tomatoes are tender enough to smush.  Add 3 cloves minced garlic & smush all of your tomatoes.

  4. Cook for a few minutes & add your cooked pasta. Season your dish with salt & pepper.

  5. Add 1 cup cubed, fresh mozzarella, 1/4 cup parmesan and a handful of fresh chopped basil.

  6. Toss with a little more olive oil & top with Parmesan. Enjoy!
